Ingredients

  • 4 Tbsp. bacon drippings
  • 2 medium onions, diced
  • 1 green pepper, diced
  • 1 qt. can tomatoes
  • 1 1/2 c. celery, diced
  • 3 Tbsp. tomato paste
  • salt and pepper to taste
  • 3 c. cooked shrimp
  • 1 tsp. sugar

Directions

    Combine onions, green pepper and celery.

    Fry in bacon drippings for 15 to 20 minutes.

    Add tomatoes, sugar and tomato paste.

    Stir to break tomatoes.

    Let this mixture simmer slowly to thick consistency, about 30 to 45 minutes.

    Add salt and pepper. Fifteen minutes before serving, add cooked shrimp and stir.

    Serve over rice.

    Makes 6 to 8 servings and goes well with a mixed green salad.
