Ingredients

  • 3 lb. shrimp
  • 1 medium onion, chopped
  • 1 clove garlic, mashed
  • 2 ribs celery, chopped
  • 1 green pepper, chopped
  • 1 1/2 Tbsp. oil
  • 1 can tomato paste
  • 1 bay leaf
  • 1 Tbsp. parsley, minced
  • 1/2 tsp. sugar
  • salt and pepper
  • 2 c. long grain rice
  • 1 can tomatoes
  • 1/4 tsp. thyme

Directions

    Boil shrimp until they float.

    Peel and devein.

    Saute onion, garlic, celery and pepper in oil. Add tomatoes, tomato paste, thyme, bay leaf, parsley, sugar, salt and pepper.

    Mix, cover and simmer 30 minutes. Add shrimp and simmer 5 minutes. Serve over rice.
