Ingredients

  • 2 to 3 lb. shrimp
  • 1 Tbsp. cooking oil
  • 1 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 rib celery, chopped
  • 1 clove garlic, minced
  • 8 oz. chopped stewed tomatoes (1/2 can)
  • 3 oz. tomato paste (1/2 can)
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1 Tbsp. parsley
  • 1/2 tsp. sugar
  • salt and pepper to taste

Directions

    Boil shrimp in water about 10 minutes.

    Peel and clean.

    Heat oil in skillet.

    Add onion, bell pepper, celery and garlic. Simmer 5 minutes.

    Add tomatoes, tomato paste, thyme, bay leaf, parsley, sugar, salt and pepper.

    Stir to mix well and add shrimp.

    Simmer 1/2 hour and serve with cooked rice and French bread.
