Ingredients
- 2 to 3 lb. shrimp
- 1 Tbsp. cooking oil
- 1 onion, chopped
- 1/2 bell pepper, chopped
- 1 rib celery, chopped
- 1 clove garlic, minced
- 8 oz. chopped stewed tomatoes (1/2 can)
- 3 oz. tomato paste (1/2 can)
- 1 bay leaf
- 1/4 tsp. thyme
- 1 Tbsp. parsley
- 1/2 tsp. sugar
- salt and pepper to taste
Directions

1Boil shrimp in water about 10 minutes.

2Peel and clean.

3Heat oil in skillet.

4Add onion, bell pepper, celery and garlic. Simmer 5 minutes.

5Add tomatoes, tomato paste, thyme, bay leaf, parsley, sugar, salt and pepper.

6Stir to mix well and add shrimp.

7Simmer 1/2 hour and serve with cooked rice and French bread.
