Ingredients

  • 16 ounces cooked shrimp
  • 2 green bell peppers (sliced)
  • 1 onion (sliced)
  • 1 teaspoon thyme
  • 6 ounces tomato paste
  • 8 roma tomatoes (diced)
  • 1 cup chicken broth
  • 12 cup mushroom pieces
  • 3 garlic cloves (chopped)
  • 3 cups cooked rice
  • 3 tablespoons oil

Directions

    Saute bellpeppers, mushrooms onions and garlic in oil it usually takes me 5-10 minutes.

    Add tomatoes and thyme.

    Then add broth and tomato paste and let simmer for 10 minutes.

    Lastly add the cooked shrimp.

    Serve over cooked rice, I usually just mix the rice in to make it a one dish meal.
