Shrimp Creole

Ingredients

  • 1 large onion, chopped
  • 1 large pepper, chopped
  • 2 cloves garlic, chopped (optional)
  • 1 can tomato paste
  • 1 can tomatoes with chiles
  • 1 1/2 to 2 qt. water
  • 1/2 c. Wesson oil
  • flour
  • 2 to 3 lb. cleaned shrimp

Directions

    Combine first 6 ingredients in a large pot.

    Bring to boil and let simmer for 30 minutes.

    Brown Wesson oil and enough flour to make a paste until almost burned.

    Add to other ingredients and cook about 30 minutes.

    While this is cooking, clean shrimp.

    Then add shrimp to creole and cook 30 minutes more.

    If not thick enough, add more flour.

    Serve over rice.
