Ingredients
- 1 large onion, chopped
- 1 large pepper, chopped
- 2 cloves garlic, chopped (optional)
- 1 can tomato paste
- 1 can tomatoes with chiles
- 1 1/2 to 2 qt. water
- 1/2 c. Wesson oil
- flour
- 2 to 3 lb. cleaned shrimp
Directions

1Combine first 6 ingredients in a large pot.

2Bring to boil and let simmer for 30 minutes.

3Brown Wesson oil and enough flour to make a paste until almost burned.

4Add to other ingredients and cook about 30 minutes.

5While this is cooking, clean shrimp.

6Then add shrimp to creole and cook 30 minutes more.

7If not thick enough, add more flour.

8Serve over rice.
