Shrimp Creole With Rice

Ingredients

  • 5 lb. cooked shrimp
  • 1/4 lb. butter or margarine
  • 2 minced garlic cloves
  • 1/2 c. diced celery
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/4 c. chopped parsley
  • 1 (No. 2) can tomatoes
  • 1 can tomato sauce
  • 1 can tomato paste
  • 1 Tbsp. salt
  • dash of red pepper
  • dash of black pepper
  • 6 c. cooked rice

Directions

    Saute all chopped vegetables in butter in a large saucepan. Add the canned tomatoes, tomato sauce, paste and the seasonings. Simmer, stirring often, about 45 minutes. Add the cooked shrimp and simmer 10 minutes more.

    Line a large platter with cooked rice and pile shrimp creole in center.

    Serves 8 to 10.
