Shrimp Creole With Rice

- 5 lb. cooked shrimp
- 1/4 lb. butter or margarine
- 2 minced garlic cloves
- 1/2 c. diced celery
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/4 c. chopped parsley
- 1 (No. 2) can tomatoes
- 1 can tomato sauce
- 1 can tomato paste
- 1 Tbsp. salt
- dash of red pepper
- dash of black pepper
- 6 c. cooked rice
Directions

1Saute all chopped vegetables in butter in a large saucepan. Add the canned tomatoes, tomato sauce, paste and the seasonings. Simmer, stirring often, about 45 minutes. Add the cooked shrimp and simmer 10 minutes more.

2Line a large platter with cooked rice and pile shrimp creole in center.
