Shrimp Curry

Ingredients

  • 1/2 c. butter
  • 6 Tbsp. flour
  • 2 c. applesauce
  • 1 pkg. Lipton onion soup mix
  • 2 c. water
  • 1/2 tsp. ginger
  • 2 to 3 tsp. curry powder
  • 1/2 tsp. lemon juice
  • 3 1/2 c. shrimp, boiled and deveined

Directions

    Melt butter in large pan and blend in flour.

    Stir in the applesauce, soup mix, water, curry powder, ginger and lemon juice. Cook until it thickens to the correct consistency.

    Add shrimp and heat thoroughly.

    Serve over mounds of rice.

    Sprinkle or pass condiments (shredded coconut, ground nuts and chutney). Serves 8.
