- 3/4 c. onion, minced
- 1 clove garlic, minced
- 1 slice ginger, minced
- 2 Tbsp. margarine
- 1 Tbsp. curry powder
- 2 Tbsp. cornstarch
- 1 tsp. salt
- 1/2 c. evaporated milk (undiluted)
- 1 1/2 c. coconut milk
- 1 lb. frozen bay shrimp, thawed (undrained)
- 2 Tbsp. sherry
Directions

1Saute onion, garlic and ginger in margarine.

2Blend in curry powder, cornstarch and salt.

3Stir in evaporated milk and coconut milk, stirring constantly, until thickened.

4Add shrimp and heat.
