- 1 lb shrimp, peeled, deveined
- 2 tablespoons carrots, finely minced
- 2 tablespoons scallions, finely minced
- 1 tablespoon ginger, finely minced
- 2 tablespoons oyster sauce
- 14 teaspoon sesame oil
- 1 (12 ounce) package wonton wrappers
- 1 cup soy sauce
- 14 cup white vinegar
- 14 cup sugar
- 12 teaspoon chili paste
- 12 teaspoon ginger, minced
- 12 teaspoon sesame oil
- 1 cup water
- 1 tablespoon cilantro, chopped
Directions

1Mince 1/2 pound of shrimp in a food processor.

2Chop the other 1/2 pound shrimp.

3Combine all shrimp in medium bowl with the carrot, scallion, ginger, oyster sauce, and sesame oil.

4Using a small spoon, place approximately 1 teaspoon of the mixture in the center of each won ton wrapper.

5Moisten the outside edge of the the wrappers with water, fold from corner to corner and seal using your wet finger.

6To steam, bring water in a steamer pot to a boil.

7Spray bottom of steamer basket with non-stick spray.

8Steam covered for 7-10 minutes.

9Dumplings should be firm with an internal temperature of 160 degrees.

10Serve with dipping sauce.

11To make dipping sauce: Combine soy sauce, vinegar, chili paste, sugar, ginger, sesame oil, water, and cilantro.

12Whisk together.
