- 1/2 c. butter or margarine
- 1 1/2 Tbsp. all-purpose flour
- 3/4 c. chopped celery
- 3/4 c. chopped green pepper
- 3/4 c. chopped onion
- 1 lb. peeled, uncooked shrimp
- salt and pepper to taste
- cayenne to taste
- 1/4 c. chopped green onion tops
- 1/4 c. chopped parsley
- hot cooked rice
Directions

1Melt butter in a large skillet.

2Add flour and lightly brown it.

3Add celery, green pepper and onion.

4Cook until tender, stirring occasionally.

5Add shrimp.

6Cover and cook 15 minutes on low heat, stirring occasionally.

7Add salt, pepper and cayenne to taste.

8Add onion tops and parsley.
-
9Simmer a few minutes, covered, to blend seasoning.

10Serve over rice.
