Shrimp Fried Rice

- 4 c. boiled rice (cold)
- 1 chopped onion
- 3 Tbsp. oil
- 3 eggs, beaten
- 1 lb. raw shrimp, unsliced
- 1/2 c. sliced mushrooms
- 3 gloves garlic
- 2 Tbsp. soy sauce
Directions

1Heat 1 tablespoon of oil and fry eggs on both sides.

2Remove egg and shred.

3Heat rest of oil and brown garlic and onion. Once garlic is browned, add rice.

4Add shrimp, stirring while cooking, until they turn pink.

5Add rest of ingredients and stir until thoroughly heated, about 5 to 8 minutes.

6Serve topped with shredded eggs.
