Ingredients

  • 1/4 c. oleo
  • 2 Tbsp. flour
  • 2 minced garlic buds
  • 2 small sliced onions
  • 1/2 sliced green pepper
  • 1 can tomatoes
  • 1 can tomato paste
  • 1 pt. water
  • 1 bay leaf
  • 1 1/2 Tbsp. salt
  • 1/4 tsp. black pepper
  • 3 c. water
  • 1 1/2 lb. shrimp
  • 3 c. cooked rice
  • 1/4 c. parsley
  • 1/2 tsp. chili powder

Directions

    Melt oleo. Stir in garlic, onion, pepper and flour.

    Cook until tender.

    Combine tomatoes and paste with water. Add this, plus remaining ingredients (except shrimp and rice).

    Simmer 45 minutes. Cool.

    Add shrimp and simmer, covered, 5 minutes or until shrimp are pink and tender. Serve over rice.
