- 1/4 lb. chopped bacon slices
- 2 c. chopped okra
- 1/2 c. chopped onion
- 1/3 c. chopped green pepper
- 1/2 c. chopped celery
- 4 c. hot water
- 2 large tomatoes, peeled and chopped
- 1 clove garlic, mashed
- 1 bay leaf
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. thyme
- 1 lb. shrimp, shelled and deveined
- rice
Directions

1Fry bacon until crisp.

2Add okra, onion, green pepper and celery; saute 10 minutes or until lightly browned.

3Add water, tomatoes, garlic, bay leaf, salt, pepper and thyme.

4Cover and simmer 1 hour.

5Add shrimp last 10 minutes of cooking.

6Serve hot with large spoonful of rice for each serving.

7Makes 1 1/2 quarts.
