- 2 Tbsp. Oil
- 1 to 3 lb Shrimp
- 1/2 c. flour
- 2 Tbsp. water
- 2 c. onions finely chopped
- 2 minced garlic cloves
- Gumbo File
- Tony's Chachere's
- 1 brunch green onion chopped
- 4 to 6 cups boiled rice
Directions

1In iron skillet, over low to medium heat, heat up oil until hot.

2Stir in flour, stirring continuously until dark brown.

3Add 2 Tbsp. water, stirring until you paste has the consistency of peanut butter.

4Meanwhile, bring to boil, 2 to 3 quart of water in large pot.

5Add rue to pot and stir in until mixed.

6Add onion and celery.

7Cook 10 to 15 minutes, until onions turn clear.

8Add shrimp and garlic.

9Cook 5 more minutes, seasoning with Gumbo Fil and Tony's to taste.

10Serve by pouring over servings of rice and garnish with chopped green onions.
