Ingredients
- 1 (1 to 1 1/4 lb.) soup bone
- 6 1/2 c. water
- 1 Tbsp. salt
- 1 bunch green onions
- 2 c. sliced okra
- 2 Tbsp. bacon drippings
- 1 c. peeled chopped tomato
- 1 pod hot pepper
- 1 large green pepper, chopped
- 1 to 2 tsp. dried whole thyme
- 1 bay leaf
- 1 lb. shrimp, peeled and deveined
- hot cooked rice
Directions

1Combine soup bone, water and salt in large saucepan.

2Bring to a boil.

3Reduce heat to low and simmer 1 hour.

4Trim tops from green onions.

5Chop bulbs and tops separately and set aside. Saute onion bulbs and okra in hot bacon drippings 10 minutes.

6Add tomato and saute about 5 minutes.

7Add 6 cups soup stock, green onion tops and next 5 ingredients.

8Bring to a boil.

9Cover, reduce heat and simmer 1 1/2 hours.

10Serve over rice.

11Yield: about 2 quarts.
