- 2 lb. fresh shrimp
- 1/2 c. lemon juice
- 1/2 c. vegetable oil
- 1/4 c. soy sauce
- 3 Tbsp. chopped parsley
- 2 Tbsp. chopped onion
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 clove minced garlic
- vegetable cooking spray
Directions

1Peel shrimp and devein; set aside.

2Combine lemon juice and the next 7 ingredients in a dish; set aside.

3Arrange shrimp on 6-inch bamboo skewers that have been soaked in water.

4Place in lemon juice mixture, turning to coat.

5Refrigerate 2 or 3 hours. Place shrimp on rack sprayed with cooking spray into broiler pan. Broil 6 inches from heat with oven door partly open 3 to 4 minutes on each side, basting with the marinade.

6Serve hot or cold.
