  • 2 lb. raw shrimp, thawed
  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 6 oz. tomato paste
  • freshly ground black pepper to taste
  • 1 Tbsp. minced green basil (fresh or 1 tsp. dried basil)
  • 1/4 tsp. oregano
  • 1/2 c. finely minced green onions (scallions)
  • 1 c. chicken broth

Directions

    Heat the oil and cook shrimp and garlic briefly for about 3 minutes, just until shrimp turns pink.

    Stir in the remaining ingredients.

    Bring to a boil and simmer for about 2 minutes. Serve hot.
