Shrimp Medley

Ingredients

  • 1 1/2 lb. shrimp, shelled
  • 1 (16 oz.) can skinned tomatoes
  • 1 small yellow squash
  • 1 small zucchini
  • 1 medium red pepper
  • 1 medium onion
  • 6 garlic cloves
  • 1 stick butter
  • 1 Tbsp. chili powder
  • 1 or 2 c. rice

Directions

    Saute shrimp in garlic and butter on high heat just enough to brown on both sides.

    Take from skillet and saute red pepper and onion until translucent.

    Pour in tomatoes and sliced squash and zucchini and cook vegetables until crisp.

    Add shrimp long enough to heat, then add chili powder.

    Cook rice as directed.

    Serve over rice or rice as side dish.
