Ingredients
- 1 1/2 lb. shrimp, shelled
- 1 (16 oz.) can skinned tomatoes
- 1 small yellow squash
- 1 small zucchini
- 1 medium red pepper
- 1 medium onion
- 6 garlic cloves
- 1 stick butter
- 1 Tbsp. chili powder
- 1 or 2 c. rice
Directions

1Saute shrimp in garlic and butter on high heat just enough to brown on both sides.

2Take from skillet and saute red pepper and onion until translucent.

3Pour in tomatoes and sliced squash and zucchini and cook vegetables until crisp.

4Add shrimp long enough to heat, then add chili powder.

5Cook rice as directed.

6Serve over rice or rice as side dish.
