Shrimp Mousse

Ingredients

  • 1/4 c. shallots, chopped
  • 1 1/2 c. cooked, chopped shrimp
  • 8 oz. cream cheese
  • 1 can tomato soup
  • 1/2 c. chopped celery
  • 1 1/2 Tbsp. unflavored gelatin
  • 1 c. mayo
  • salt and pepper to taste

Directions

    In pot, dissolve gelatin in 1/4 cup water; add soup and boil. Add cheese until melted.

    Blend in mayo.

    Add shrimp, shallots and celery.

    Grease mold and fold in mixture.

    Chill for at least 12 hours.

    Serve with crackers.
