- 1 c. shredded Swiss cheese (4 oz.)
- 4 eggs
- 2 c. half and half
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne red pepper
- 2 (9-inch) pastry crusts (deep dish)
- 2 cans deveined shrimp, cooked
Directions

1Prepare pastry.

2Sprinkle cheese and shrimp into pie crusts. Beat eggs slightly; beat in remaining ingredients.

3Pour egg mixture into pie crusts.

4Cook, uncovered, in 425° oven for 15 minutes.

5Reduce oven to 300°.

6Cook, uncovered, until knife inserted halfway between center and edge comes out clean, about 30 minutes longer.

7Let stand 10 minutes before cutting.
