Ingredients

  • 1 (10-inch) prebaked pie shell
  • 2 Tbsp. butter
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1 1/2 c. shrimp, cooked and shelled
  • 1/2 c. vinegar
  • 5 eggs
  • 2 c. milk
  • 1 Tbsp. tomato paste
  • 2 dashes hot pepper sauce
  • 1/2 c. shredded Gruyere cheese

Directions

    Melt butter in saucepan, stir in oregano, salt, pepper and nutmeg.

    Saute shrimp about 2 minutes.

    Add vinegar and boil rapidly until most of liquid has evaporated.

    Spread shrimp in bottom of pastry shell.

    Beat together eggs, milk, tomato paste and hot pepper sauce.

    Pour over shrimp.

    Spread cheese evenly over top of egg mixture.

    Bake in preheated oven at 375° for 35 to 40 minutes, or until knife inserted near center comes out clean.
