- 2 1/2 lb. shrimp (small or medium)
- 1 (8 oz.) pkg. shredded Mozzarella cheese
- 1 (6 oz.) pkg. shredded Mozzarella cheese
- 1 (6 oz.) pkg. shredded sharp cheese
- creamed spinach (homemade or frozen)
- 2 medium tomatoes
- Parmesan cheese or fine bread crumbs
Directions

1Boil or steam shrimp, then drain off any water.

2Mix shrimp with creamed spinach.

3Mix in 8 ounces Mozzarella cheese and 4 to 6 ounces sharp cheese.

4Salt and pepper to taste.

5Slice tomatoes in wedges and place around edges of dish.

6Sprinkle top with remaining Mozzarella.

7Top with a light sprinkling of Parmesan cheese or fine bread crumbs.

8Bake 15 to 20 minutes at 375°. Place under broiler for 1 minute to brown top lightly.
