- 1/4 c. butter or margarine
- 2 Tbsp. olive or vegetable oil
- 2 lb. medium shrimp, shelled and deveined
- 2 cloves garlic, minced
- 2 Tbsp. chopped fresh parsley
- 2 tsp. fresh lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Heat butter and oil together in a large skillet.

2Add shrimp and saute 3 minutes or until pink.

3With a slotted spoon, remove shrimp; set aside.

4Add garlic and saute 1 minute.

5Stir in parsley, lemon juice, salt, pepper and shrimp; cook 1 minute.

6If desired, serve over rice.
