  • 2 lb. fresh large shrimp
  • 1/2 c. butter or margarine
  • 1 tsp. salt
  • 6 cloves garlic, crushed
  • 1/4 c. chopped fresh parsley
  • 2 tsp. grated lemon zest
  • 2 Tbsp. fresh lemon juice
  • 3 c. hot cooked white rice
  • parsley sprigs and lemon wedges for garnish

    Preheat oven to 400°.

    Slit each peeled shrimp along back edge.

    Dry shrimp well on paper towels.

    Melt butter in 9 x 13-inch pan, adding salt, garlic and tablespoon of chopped parsley.

    Arrange shrimp in single layer and bake uncovered for 5 minutes.

    Turn and baste shrimp cooking on both sides.

    Sprinkle shrimp with lemon zest, lemon juice and remaining parsley.

    Bake until shrimp is pink and tender.

    Do not overbake.

    Serve with rice and garnish with remaining parsley.
