Ingredients
- 2 lb. fresh large shrimp
- 1/2 c. butter or margarine
- 1 tsp. salt
- 6 cloves garlic, crushed
- 1/4 c. chopped fresh parsley
- 2 tsp. grated lemon zest
- 2 Tbsp. fresh lemon juice
- 3 c. hot cooked white rice
- parsley sprigs and lemon wedges for garnish
Directions

1Preheat oven to 400°.

2Slit each peeled shrimp along back edge.

3Dry shrimp well on paper towels.

4Melt butter in 9 x 13-inch pan, adding salt, garlic and tablespoon of chopped parsley.

5Arrange shrimp in single layer and bake uncovered for 5 minutes.

6Turn and baste shrimp cooking on both sides.

7Sprinkle shrimp with lemon zest, lemon juice and remaining parsley.

8Bake until shrimp is pink and tender.

9Do not overbake.

10Serve with rice and garnish with remaining parsley.
