Shrimp Scampi

Ingredients
- 2 lb Shrimp (preferably Tiger Prawns)
- 1 tsp Red Pepper Flakes (more or less for your spice tolerance)
- 2 tbsp Butter
- 2 tbsp Extra Virgin Olive Oil
- 1/2 cup Chardonnay (Pinot Grigio works well with seafood too, or any white wine you like to drink)
- 1 bunch Italian Flat Leaf Parsley
- 1 each Lemon
- 3 clove Garlic
Directions

1Start with oiling the pan then sweating the minced garlic.

2Season lightly with salt and pepper.

3After about 2 minutes add the prawns and pepper flakes and let them cook on high heat just to give it color on both sides.

4Don't fully cook them yet, we just want some color.

5It should take 2-3 minutes.

6Once they have some color start removing them and set aside onto a plate.

7Now add the extra virgin olive oil, butter, and wine and let it reduce to about half it's volume.

8If you like more sauce just add more olive oil, butter, and wine and continue reducing.

9Once reduced add the half cooked prawns, rough chopped Italian parsley, lemon zest, and juice of half the lemon.

10Cook for about 1-2 minutes to finish cooking the prawns.

11Taste the sauce and season with salt and pepper if needed.

12If you cook the shrimp right they will have a nice crunch to them.

13Serve it as it is or over your favorite pasta.

14It also goes nicely with some warm crusty bread.
