- 2 lb. large shrimp, shelled (except tails)
- 1 oz. butter
- 1 oz. olive oil
- 1/4 tsp. fresh ground pepper
- 1/4 tsp. salt
- 2 oz. dry vermouth
- juice of 2 lemons
- 1 small whole clove garlic, crushed
Directions

1Into a large skillet, place olive oil.

2When simmering, add scampi and allow to cook until golden brown.

3Reduce heat and add butter, garlic, salt and pepper.

4When you think you have too much salt, add more.

5This is one dish you cannot oversalt.

6When well blended, raise fire to very hot.

7Add lemon juice and dry vermouth; cook for about one minute, constantly stirring.

8Serve as an appetizer or an entree.
