- 1 lb. large shrimp or 1 lb. frozen shelled and deveined shrimp, thawed
- 1/2 c. butter
- 1/2 c. olive or vegetable oil
- 3 garlic cloves, finely chopped
- 2 Tbsp. chopped parsley
- 1 lemon, cut in thin wedges
Directions

1Cut shrimp down the back lengthwise with kitchen shears, being careful not to cut all the way through.

2With shells intact, remove black veins, rinse and pat dry.

3(If using frozen shrimp, start with this step.)

4Melt butter with oil in a large skillet.

5Add garlic and saute just until garlic is lightly golden.

6Add shrimp; saute, shaking skillet and stirring 2 to 3 minutes, or just until shrimp is pink and firm.

7Garnish with chopped parsley and lemon wedges.
