Shrimp Soup

Ingredients
- 4 qt. whole tomatoes
- 2 lb. fresh medium shrimp
- 2 Tbsp. olive oil
- 1 medium size head Chinese cabbage (celery cabbage)
- 1 Tbsp. crushed red pepper
- salt to taste
Directions

1Pour tomatoes in a large soup pot, crushing tomatoes with your fingers.

2Bring to a boil.

3Add olive oil and red pepper.

4Rinse shrimp and peel shell off each shrimp and add to tomatoes.

5Stir occasionally.

6Cut cabbage into 1-inch pieces and add to soup. Simmer on medium heat for 2 hours, stirring occasionally or until cabbage is tender.

7Salt to taste.

8Serve with crusty Italian bread and butter.
