- 1/2 cup mayonnaise
- 1/2 - 1 teaspoon dried tarragon
- 1 large gherkin, diced
- 1 tablespoon capers, drained and rinsed
- 2 teaspoons mustard, made
- 1 spring onion, diced
- to taste fresh black pepper, ground
Directions

1Place shrimp in a bowl.

2Combine all remaining ingredients and pour over the shrimps, turning to coat well.

3Cover and refrigerate for 2 hours for flavours to develop.

4Serve in cocktail glasses and garnish with fresh chopped herbs.
