Shrimp Stroganoff

  • 1 1/2 lb. raw shrimp, peeled and deveined
  • 2 Tbsp. butter or margarine
  • 1 (10 1/2 oz.) can cream of shrimp soup
  • 1 (10 1/2 oz.) can cream of mushroom soup
  • 1 c. sour cream
  • 1/4 tsp. curry powder
  • 2 Tbsp. parsley, chopped
  • cooked rice or egg noodles

Directions

    Saute shrimp in butter for 3 to 5 minutes over low heat, stirring frequently.

    Add soups and stir until well blended.

    Stir in sour cream, curry powder and parsley.

    Continue stirring until mixture is piping hot, then serve immediately over hot cooked rice or noodles.

    Makes 4 to 6 servings.
