Ingredients
- 6 water chestnuts
- 1 (6 1/2 oz.) can chopped shrimp, drained
- 2 eggs
- 2 green onions, chopped
- 2 Tbsp. butter, melted
- 2 1/2 Tbsp. cornstarch
- 1 tsp. salt
- 8 slices bread (no crusts)
- oil (for frying)
Directions

1Chop chestnuts medium fine in food processor.

2Remove.

3Process shrimp, eggs, onions, butter, cornstarch, salt and sugar until onions are tiny flecks.

4Stir into chestnuts.

5Mix well.

6Mixture will be wet.

7Spread each slice of bread with 1 tablespoon of mixture.

8Cut into triangles.

9Let set in refrigerator for 15 minutes.

10Fry, shrimp side down, 6 to 8 at a time, for 1 minute until done.
