- 1/2 lb. shrimp
- 1/2 c. rice (white or brown)
- 4 scallions or 1 small onion, chopped
- 1/4 c. oil
- 2 eggs, lightly scrambled
- salt and pepper
Directions

1Boil rice according to box directions.

2Rinse rice so it will not stick together.

3In frying pan, fry onions in oil until clear; add shrimp and fry until pink.

4Add rice to shrimp mixture; stir until onion and shrimp are evenly distributed through the rice. Add eggs, mixing until they are evenly distributed.

5Put cover on pan; reduce heat to low and cook 15 to 20 minutes until eggs set.
