- 1 Tbsp. cornstarch
- dash of salt
- 1/4 c. plus 2 Tbsp. sugar
- 3 egg whites (room temperature)
Directions

1Combine water, sugar and cornstarch in a small saucepan, stirring well.

2Cook over medium heat, stirring constantly until transparent and thickened.

3(This will take about 2 minutes.)

4Beat egg whites and salt until foamy.

5Continue beating while gradually pouring cooked mixture into egg whites.

6Beat three minutes or until stiff (but not dry) peaks form.

7Do not overbeat.

8Yields enough for 1 (9-inch) pie.
