  • 1 large can V-8 juice
  • 1 (16 oz.) can diced tomatoes
  • 1 can vegetable broth
  • assorted vegetables (broccoli flowerets, cauliflower flowerets, 1 zucchini, 3 carrots, topped and peeled, green beans, cut in thirds)
  • 1 c. frozen peas
  • 1 c. kernel corn
  • 1 onion, peeled and washed
  • 2 qt. water

Directions

    In a large stockpot, heat V-8, broth, water and diced tomatoes. Do not boil. Add all fresh vegetables.

    Reduce heat and cook until tender. Add peas and corn 5 minutes before serving. Garlic bread or crusty rolls make this a hearty meal.
