Ingredients

  • 1 Tbsp. chopped fresh ginger
  • 2 cloves garlic, finely minced
  • 1/4 c. dark soy sauce
  • 1/4 c. dry sherry
  • 1/4 c. vegetable oil
  • 1 lb. boneless, skinless chicken breasts, cut in 1-inch cubes
  • 2 Tbsp. vegetable oil
  • 1/4 lb. fresh snow peas, cut in thirds
  • 1/4 lb. fresh pearl onions, sliced
  • 1/4 c. minced fresh basil
  • 2 to 4 tsp. minced hot green chiles, jalapeno or cerrano (more or less to taste)

    Combine ginger, garlic, soy sauce, sherry and oil in shallow glass bowl and add the chicken.

    Stir well and let marinate for 2 hours at room temperature or 8 hours in the refrigerator.
