  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. beef stock
  • salt
  • peppercorns
  • 1/2 tsp. chopped chives
  • 1/2 tsp. mustard
  • 1 Tbsp. horseradish
  • 1/4 c. cream
  • 1 tsp. lemon juice

    Melt butter, add flour, blend and gradually add the beef stock.

    Stir in seasoning, chives, mustard and horseradish.

    Cook for 2 minutes.

    Strain.

    Add cream and lemon juice and bring to a boil.
