  • 350g chicken mince Whole Foods 1 lb For $3.99 thru 02/09
  • 2 cooking apples, peeled cored and grated
  • 1 medium carrot, peeled and grated Target 2 lb For $3.00 thru 02/06
  • 2 medium zucchini, grated and excess moisture drained
  • 1 medium onion, peeled and diced
  • 3 teaspoons VEGEMITE
  • 1/4 teaspoon ground ginger
  • 1 teaspoon grated lemon rind
  • 1 cup wholemeal breadcrumbs
  • 1 tablespoon oil

Directions

    Combine chicken, apples, carrot, zucchini, onion, Vegemite*, ginger and lemon rind; mix well.

    Take tablespoonfuls of mixture and roll into balls.

    Coat with breadcrumbs.

    Refrigerate for 40 minutes.

    Cook in a preheated hot oven (200C) for 25 - 30 minutes.
