- 2 beaten eggs
- 3/4 c. soft bread crumbs
- 1/2 c. tomato juice
- 2 Tbsp. snipped parsley
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1 small clove garlic, minced
- 2 lb. lean ground beef
- 8 thin slices boiled ham

- 6 oz. (1 1/2 c.) shredded Mozzarella cheese
- 3 slices Mozzarella cheese, halved diagonally
Directions

1Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic.

2Stir in ground beef and mix well.

3On foil or waxed paper, pat meat into a 12 x 10-inch rectangle. Arrange ham slices atop meat, leaving a small margin around edges. Sprinkle shredded cheese over ham.

4Starting from short end, carefully roll up meat using foil to lift; seal edges and ends. Place roll, seam side down, in a 13 x 9 x 2-inch baking pan.

5Bake in 300° oven for 1 hour and 15 minutes.

6Place cheese wedges over top of roll.

7Return to oven 5 minutes or until cheese melts. Serves 8.
