Ingredients

  • 2 tbsp olive oil
  • 4 tbsp butter
  • 2 shallots, chopped
  • 3 garlic cloves, crushed
  • 9 cup mixed mushrooms, thickly sliced
  • 4 pieces sun-dried tomatoes in oil, drained and chopped
  • 6 tbsp dry white wine, use one one that you would drink
  • 7 oz can pinto beans, drained
  • 7 oz can borlotti beans,drained
  • 3 tbsp freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 pinch each off salt and freshly ground pepper
  • 1 freshly cooked pappardelle pasta to serve

Directions

    Heat the oil and butter in a frying panand fry the shalotts until soft.

    Add the garlic and mushrooms to the pan and fry for 3-4 minutes.

    Stir in the sun-dried tomatoes, wine and seasoning to taste.

    Stir in the beans and cook for about 5-6 minutes, until most of the liquid has evaporated and the beans are warmed through.

    Stir in the Parmesan cheese.

    Sprinkle and serve immediately with the pasta.
