- sugar (2 to 2 1/2 Tbsp. per egg white)
Directions

1Beat with an electric mixer on high speed for 1 minute or until soft peaks form (tips curl) when beaters are lifted out.

2A hand mixer works fine but beating time may be slightly longer.

3At soft peak stage, add sugar slowly while beating egg whites, so that sugar dissolves.

4Beat 7 minutes or until stiff peaks form (tips stand straight).

5Spread the meringue over hot pie filling to avoid leakage between filling and meringue.

6Also, seal the crust well to prevent leakage and shrinking.

7Bake at 350° for 12 to 15 minutes or until golden.
