- 200 grams Fresh sashimi grade tuna
- 1 Onion
- 2 tbsp Mentsuyu (3x concentrate)
- 2 tbsp Soy sauce
- 3 tbsp Sugar
- 2 tbsp Sake
- 1 tbsp Mirin
- 1 Green onions or scallions

1This is the whole piece of scrap tuna.

2It has a lot of meat on the bones.

3Since it has blood and muscle fibers in the meat, it's not suitable to eat raw.

4You could also use a slightly aged sashimi grade block of tuna or albacore tuna.

5Cut it into 2cm cubes.

6Parboil the tuna quickly in water.

7Drain in a colander and then gently wash.

8Next, combine the tuna, sliced onions, and the ingredients in a pot and cook.

9Bring to a boil over low heat.

10Skim off any scum.

11Cover with a lid and simmer until the liquid boils down.
