  • 200 grams Fresh sashimi grade tuna
  • 1 Onion
  • 2 tbsp Mentsuyu (3x concentrate)
  • 2 tbsp Soy sauce
  • 3 tbsp Sugar
  • 2 tbsp Sake
  • 1 tbsp Mirin
  • 1 Green onions or scallions

    This is the whole piece of scrap tuna.

    It has a lot of meat on the bones.

    Since it has blood and muscle fibers in the meat, it's not suitable to eat raw.

    You could also use a slightly aged sashimi grade block of tuna or albacore tuna.

    Cut it into 2cm cubes.

    Parboil the tuna quickly in water.

    Drain in a colander and then gently wash.

    Next, combine the tuna, sliced onions, and the ingredients in a pot and cook.

    Bring to a boil over low heat.

    Skim off any scum.
