  • 2 12 cups celery, thinly sliced
  • 1 bunch green onion, trimmed and thinly sliced
  • 1 (16 ounce) can red kidney beans, drained and rinsed
  • 1 (16 ounce) can garbanzo beans, drained and rinsed
  • 1 (16 ounce) can black-eyed peas, drained and rinsed
  • 1 (15 ounce) can carrots, sliced and drained
  • 1 (8 ounce) can cut green beans, drained
  • 1 (3 ounce) jar stuffed green olives, drained and halved (optional)
  • 1 (2 1/2 ounce) can black olives, sliced and drained
  • 12 cup parsley, finely chopped
  • 12 cup olive oil
  • 12 cup red wine vinegar
  • 18 teaspoon ground black pepper
  • 1 garlic clove, minced

    Combine the celery, green onions, kidney beans, garbanzo beans, black-eyed peas, carrots, green beans, green olives if desired, black olives and parsley in a large bowl.
