  • 100 g caster sugar
  • 100 g soft butter
  • 100 g self-raising flour
  • 1 large whisked egg
  • 1 teaspoon vanilla essence

    Pre heat the oven at 180C (350F/gas mark 4).

    Put the cases in the cupcake tray.

    Creme the sugar and butter together in the bowl, then add the beaten egg and vanilla.

    Mix until combined.

    Next sift in the flour and mix again until the batter is fluffy and has a dropping consistency.

    Add dashes of milk if necessary.

    Plop a tablespoon of batter in each case and then pop in the oven 15-20 mins or till golden.

    Take out and leave for 10-15 mins to cool.

    If you want to put icing on, make sure you do it after you've let them cool.
