Simple Mango Chutney

- 2 mangos peeled and diced
- 1/2 cup apple cider vinegar
- 3 tablespoons fresh ginger You may use dry ginger too
- 1/4 cup cashew nuts
- 1/4 cup raisins
- cayenne peppers Optional and to taste
Directions

1Peel the mangos and dice into small pieces. Add the raisins. Add the peeled and diced ginger. Add the vinegar.

2In a sauce pan, cook the ingredients until the mangos cook to a soft texture for about 10-12 minutes. Add the cashews and Leave on low heat for few more minutes. Towards the end of the cooking time, add Cayyene pepper if you like.

3Serve the Mango Chutney with grilled chicken, meat or fish - The chutney adds a distinctive delicious taste any meat it is served with.
