  • 1/2 cup chopped onion
  • 1/2 cup chopped carrot
  • 2 bay leaves
  • 3 cups port wine

Directions

    Combine all of the ingredients in a medium-size saucepan over medium heat and bring to a boil.

    Continue to boil the mixture until it thickens and reduces to about 1/2 cup, about 45 minutes.

    Strain through a fine-mesh strainer and let cool.

    Use at room temperature. Makes 1/2 cup.
