- 3 whole Medium Tomatoes
- 2 whole Small (6 Inches Or So) Cucumbers, Divided
- 1 pint Salsa
- 1 whole Lemon, Juiced
- 2 Tablespoons Parsley, Minced
- 1 whole Green Onion
Directions

11. In a food processer, chop/blend the tomatoes.

22. Add 1 1/2 cucumbers and chop/blend (don't puree, it should be slightly chunky).

33. Pour into a serving bowl.

44. Add 1 pint of salsa and stir to combine.

55. Add the juice of 1 lemon, and season to taste with salt and pepper.

66. Dice the remaining 1/2 cucumber, mince the parsley, and thinly slice the green onion.

77. Pour gazpacho in a bowl, garnish with cucumber, parsley and green onion, and eat!
