Simple Salsa Gazpacho

  • 3 whole Medium Tomatoes
  • 2 whole Small (6 Inches Or So) Cucumbers, Divided
  • 1 pint Salsa
  • 1 whole Lemon, Juiced
  • 2 Tablespoons Parsley, Minced
  • 1 whole Green Onion

Directions

    1. In a food processer, chop/blend the tomatoes.

    2. Add 1 1/2 cucumbers and chop/blend (don't puree, it should be slightly chunky).

    3. Pour into a serving bowl.

    4. Add 1 pint of salsa and stir to combine.

    5. Add the juice of 1 lemon, and season to taste with salt and pepper.

    6. Dice the remaining 1/2 cucumber, mince the parsley, and thinly slice the green onion.

    7. Pour gazpacho in a bowl, garnish with cucumber, parsley and green onion, and eat!
