Simple Scallops Recipe

- 1 1/4 to 1 1/2 lbs. scallops, cleaned and washed
- 3 tbsp. butter
- 1/2 c. vermouth
- 1-2 tbsp. minced fresh parsley
- 1 tbsp. lemon juice
- 1 clove garlic, chopped
- Salt and white pepper to taste
Directions

1Saute/fry the garlic in butter.

2Add in liquid removed scallops and cook quickly, about 5 min.

3Remove to a hot platter and keep hot.

4Add in vermouth and simmer 1 minute or possibly two.

5Add in lemon juice, salt, pepper and parsley.

6Just at the end, swirl in 1 or possibly 2 Tbsp.

7butter just till melted.

8Pour over scallops and serve immediately.
