Simple Spinach Calzones

- 1 Tablespoon Olive Oil
- 1 whole Small Onion, Diced
- 2 cloves Garlic, Chopped
- 1 bunch Spinach, Washed, Drained And Chopped
- 1 teaspoon Italian Seasoning
- 1/2 Tablespoons Fresh Lemon Juice
- 1/2 teaspoons (or To Taste) Salt
- 1/4 teaspoons To Taste, Pepper
- 1 can Refrigerated Biscuit Dough (large Size), 8 Count
- 1 cup Packed Shredded Mozzarella Cheese
- 1 whole Egg, Beaten
- 2 Tablespoons Flour, For Dusting
- Spaghetti Sauce Or Marinara Sauce, As Desired For Dipping

1Preheat the oven according to the instructions on the can of biscuits.

2Heat oil in a skillet over medium heat.

3Add onions and saute them in the olive oil until softened.

4Add garlic and saute about a minute longer.

5Stir in the Italian seasoning and lemon juice.

6Throw in the chopped spinach and cook until wilted.

7Add salt and pepper to taste.

8Take two biscuits and squish them together and try to form a ball.

9Set the ball of dough on a lightly floured surface.

10Use your rolling pin to roll it out into a flat circle.

11Try to get it pretty thin.

12You may need to flour your rolling pin or the top of the dough a little so it doesnt stick.

13I started by making 3 of these, and if there is filling left over you can make a fourth.

14Lay about 2-3 tablespoons of the spinach mixture on one side of the circle of dough leaving a little space on the edges.

15Top the spinach on each one with cheese.

16Fold the dough over the filling (making a 1/2 moon shape) and line up the edges.

17Use the tip of a fork and press down around the open edge to seal.

18Brush the tops with beaten egg.

19Place them on a greased baking sheet and bake for about 15-20 minutes, or until they are a golden brown.

20If they are not browning well, do as I did and pop them under the broiler for about a minute at the end of the bake time.

21Serve heated marinara sauce on the side for dipping!

22Note: You may have biscuits left over from the tube so use them for breakfast in the morning with jelly!
