  • 1 1/4 cups flour all purpose
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 7 eggs
  • 1 teaspoon vanilla extract

    Preheat the oven to 180°C

    Prepare a 10-inch cake pan by placing a parchment paper at the bottom

    In a small bowl ... mix the flour and the baking powder and set aside
  4. 4
    In a stand up mixer with the whisk attachment; add the eggs, sugar and vanilla

    Whisk the mixture until it doubles in size

    Remove the bowl and now all the mixing is to be done by hand .. so that the eggs do not deflate ... add the flour a little at a time .. around 2 to 3 tb at a time ..

    Mix in a round and across motion...meaning ... one time go in a circle around the bowl and one time across ... do that gently .. remember we dont want to deflate the eggs ... repeat by adding the flour until u finish the flour mixture

    Pour into prepared pan and bake for 30 to 40 mins ... until tester inserted comes out clean ...
