- 1 small onion, chopped
- 2 small cloves garlic, minced
- 1 Tbsp. basil
- 5 large mushrooms
- 1 (16 oz.) can tomatoes, drained
- 1 pkg. mixed vegetables, frozen
- 1 tsp. salt
- pepper to taste
- 1 (6 oz.) pkg. spaghetti, cooked and drained
- 1 Tbsp. Parmesan cheese, grated
Directions

1In a large skillet, heat oil over medium heat.

2Add onion, garlic, basil, mushrooms and tomatoes; cook 5 minutes.

3Add vegetables, salt and pepper.

4Cook approximately 10 minutes; stir often until tender, but crisp.

5Pour over cooked pasta; sprinkle with Parmesan cheese.
